- 2 cups cooked long_grain_brown_rice
- 3 tablespoons water
- 1/4 cup prepared pesto, plus extra for garnish
- 1 cup chicken, cooked and shredded
- 1/4 cup pine nuts, plus extra for garnish
In a skillet over low heat, add rice and water; stir. Cover and steam rice 4 to 5 minutes.
Stir in pesto, shredded chicken and pine nuts. Heat, uncovered, an additional 3 to 4 minutes until the chicken is heated through.
Serve with a dollop of pesto and a few pine nuts sprinkled on top.
