Mushroom Onion Rice

With beef consommé and French onion soup, this mushroom onion rice is more main event than side dish. Garnish with grated Gruyere for a gourmet finishing touch.

INGREDIENTS

  • 3 tablespoons butter
  • 1 cup uncooked organic_long_grain_white_rice
  • 1 (10.5 ounce) can beef consommé
  • 1 (10.5 ounce) can French onion soup
  • 1/2 cup water
  • 1 cup mushrooms, sliced
  • 1/4 cup Gruyere cheese, grated, optional

INSTRUCTIONS

In a 6 to 8 cup microwave-safe container, melt butter. Add rice and stir to coat. Add consommé, onion soup, water and mushrooms. Cover and microwave on high 30 minutes. Remove from microwave and keep covered an additional 15 minutes. Stir, top with cheese and serve.
