Citrus Berry Rice Salad
4 cups salad
- 3 cups cooked organic_long_grain_brown_rice
- 1/2 cup cashew nuts, chopped
- 2 teaspoons sesame oil
- 3/4 cup dried berry mixture (cherries, blueberries, cranberries, golden raisins)
- Juice of 1 medium orange
- Zest of 1 medium orange
- 2 tablespoons scallions, sliced, green part only
Prepare rice according to the directions on the package; set aside.
Sauté nuts until lightly toasted. Add oil and heat over low heat I minute. Add rice, dried berry mixture and juice. Stir and heat through.
Remove from heat and toss in orange zest and scallions. Serve warm.
