2 cups rice

- 3 tablespoons organic butter
- 4 tablespoons organic gluten-free flour
- 1 1/2 cups organic milk
- 1 cup organic sharp cheddar cheese, shredded
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- 1 pinch cayenne pepper
- 2 cups cooked organic_long_grain_white_rice
Grease an 8-inch square pan; set aside. Preheat oven to 350°F.
In a large skillet, melt butter over medium heat. Add flour and stir until a roux forms. Turn heat down to low. Whisk in milk and cook until mixture thickens. Stir in cheese and spices; stir until melted.
Turn off heat, stir in rice.
Pour into greased pan. Bake 20 minutes or until bubbly.
